Hello! I have a small question about apps.

An app I want to install is not compatible with my Intercept, however, I still want to force it in and see if it will work.

The app I want to run is the Minecraft Pocket Edition [Demo], however, scanning the QR code will lead to the Market page but I can't download. Installing the APK using ASTRO will not work, either. Neither does Root Explorer.

Any suggestions? I'm running on OS X Lion, so I can't do any fancy Android Bridge stuff (yet).

You can't. Unless I do some extensive research, I can't say weather or not it's the processor on the phone or the video that is incompatible. Either way, unfortunately this is not something you can force your phone to play.
