tThis is the easiest way to describe it android is broken up into 2 parts Android and its Linux kernel. A ROM is where you flash both of these at the same time(such as the CL14 update that comes with the Sprint tool and the 2.1 ROM that SDX released). When we say kernel we are saying to only flash the Linux part and leave the Android side alone. What this does is it allows you to modify your phone without losing all your data and settings. When you flash one of the full roms it will completely reset your phone.

That said:
If you want to stay with Android version 1.5 until Sprint officially releases 2.1 then there are many custom kernels to choose from.(also note that these kernels will NOT work for 2.1)

However if you choose to Flash the 2.1 ROM that SDX released there are currently no custom kernels since Sprint isn't obligated to release the source code necessary to make the custom kernels.(untill the official update is released)

Hopefully this helps eleviate some confusion. Especially now that 2.1 is coming up.

If it even helps one person. It was worth posting. I see myself and others having to explain this all the time. Glad I could help.
