I have been experimenting with different themes all day today, trying to find one i prefer. I have tried numerous ones from sdx and all over. After a few hours of just trying different ones, I now all of a sudden have Launcher Pro stuck on my Intercept. If I try to download any other themes, it force closes on me. i have tried going all the way back to reinstalling the first 2.1 update and no fix in site.
Any one have this problem or give me any ideas how to get rid of it. I go to App Manager, which I have two different ones plus the phone one, but Launcher Pro is not listed in any of them to delete it.

Boot into recovery -> Clear Dalvik -> apply DE03 STOCK THEME TEMPLATE.zip -> Reboot
Also, you can apply your chosen theme as instructed. Reboot into recovery -> Clear Dalvik Cache -> Apply .zip of whatever launcher you want that isn't included in the already chosen theme.
Ensure you read the changelog and or instructions of the themes you choose. The devs and themers are great about explaining the theme specs etc.
